Default NMR for Gelatine (protein)

Hi all,
1H NMR spectra were realized on freeze-dried gelatine samples. Spectra were obtained on a Bruker Avance 500 MHz spectrometer equipped with 4 mm 1H HR-MAS probe, at 300 ēK and 10 KHz.

I have got many peaks with different chemical shifts, the prob i dont know how to interpret these results.
here an example of what i have got:

does anyone have a clue how to proceed?

thanks
